What Will You Learn?

  • The aim of the course is to increase the awareness of the quantity of vegetable waste that are generated during different steps of food supply chain and how to mange them. The course will focus on the valorisation of plant by-products, that can be done by the extraction of functional/bioactive compounds. Moreover, the stabilization of the obtained extract and compounds and their utilization will be reviewed.
